What is it? Sydney’s game-changing seafood restaurant, helmed by star chef and king of the sea, Josh Niland.
Why we love it: Saint Peter has reopened in Paddington’s Grand National Hotel – a project five-and-a-half years in the making by Niland and his wife, Julie – and is even more wow-inducing than when it first opened eight years ago. There’s an à la carte menu for lunch, but we say go all out and order the nine-course set menu. In each dish, Niland celebrates fish in all its glory, whether it’s his fish charcuterie or coral trout noodle soup made from the fish bones, and champions sustainability in each delicious bite. This is special-occasion dining and one of the most memorable meals we’ve had.
Time Out tip: There’s a separate bar area called Saint Peter Bar, where you can drop in for frosty Martinis and Niland’s legendary yellowfin tuna cheeseburger. There are no bookings – just come when you want.
