While MASL (Metres Above Sea Level) indulged Singapore in an exclusive but limited time Peruvian dining experience designed by culinary power husband and wife couple, Virgilio Martínez (Central) and Pía León (Kjolle, No.1 World 50 Best Female Chef), showcasing the mega biodiversity and the depth of Peruvian ingredients at different elevations, we bring you three places where you can still experience the incredible diversity of Peruvian cuisine everyday.

Modern Peruvian cuisine, colourful interiors, upbeat salsa music and the vibrant energy of Latin American culture is what makes dining at Canchita unique. Named after the large corn kernels behind the popular Peruvian popcorn snack, Canchita is founded and helmed by Peruvian husband-Mexican wife duo Daniel and Tamara Chavez. The couple continues their mission of showcasing the wide diversity of Latin American flavours, colours and ingredients to the world, through its 80-seat main dining room Amazonas, the 30-seat ceviche bar Inca, and the green outdoor terrace, each of which are inspired by the lush Amazonian landscapes. Come for the sublime ceviches (from $24), hearty Peruvian anticuchos skewers (from $24) and arroz rice dishes ($36), and stay for Tamara’s mean tacos (from $20) and Mexican street food (from $14). Also, don’t miss out on the Canchita Experience, the daily curated five-course ‘A True Journey To Latino Flavours’ tasting menu ($128).

You can’t think of Peruvian food without thinking of the Nikkei influences that shaped the cuisine. FLNT (pronounced ‘flint’) is Singapore’s very first (and perhaps only) Nikkei-influenced sumiyaki rooftop bar and grill, showcasing the perfect marriage of Peruvian ingredients with traditional Japanese culinary techniques. Not only is the food great, but so is the ambience, as FLNT@1-ATICO flanks floor-to-ceiling cityscape views from its penthouse location on the 55th floor of ION.

The Nikkei Bara Chirashi Don ($48) and always a popular favourite on FLNT’s lunch menu, the white and charcoal binchotan-fuelled grills (from $18), and ceviches ($20) are all must-haves, as is FLNT’s Foie Gras Taco ($26/2pcs). And where else can you get Shiso ice cream with chocolate soil ($16)? We also quite like the specially curated choice of the two Dinner Tasting Menus ($138 for 6-course and $168 for 7-course) for a true taste of the Peruvian-Nikkei journey. Likewise, indulge in the specially curated list of craft cocktails inspired by Peruvian ingredients with Japanese touches, including sake-forward tipples too (signature cocktails from $22).
