Despite the name, this classic highball is the ideal sipper for sunny, warm-weather days. The tried-and-true recipe for the national cocktail of Bermuda calls for the island's own Gosling's rum, ginger beer and lime. At Nolita's Genuine Liquorette, master mixologist Eben Freeman creates a Mexican-bulldog–style version of the drink by inverting an airplane-sized bottle of rum directly into a can of ginger beer.
