From Folklore
Born into a Peranakan and Eurasian family, chef Damian D'Silva has been cooking in his grandparents' kitchen since he was a young boy. Now 62 years old, D'Silva has made it his life's work to showcase what Singapore's ethnic cuisines have to offer at Folklore.
Soul food that speaks to the heart has always a part of this former aviation engineer's identity. He's run multiple kitchens in city, including Soul Kitchen and Immigrants, championing heritage food by preparing nostalgic dishes not commonly found in other restaurants due to the amount of manual labour and preparation time involved.
Despite living in Singapore, we bet you haven't tried some of these traditional recipes before, so check out Time Out's Balik Kampong Heritage Dinner to see what D'Silva has up his sleeves.
