Swabian chef Juan Amador – whose now-defunct restaurant Amador in Mannheim once held three Michelin stars – brings his Asian-inflected Spanish-European cuisine to a new spot at Goodwood Park Hotel. Food is prepared by chef Haikal Johari, who has cooked at equally prestigious Michelin-starred establishements like Joël Robuchon and Les Amis. He highlights his Malay heritage in dishes like mata lembu, his take on a sunny side egg commonly found atop a plate of fried noodles. Diners can opt for the six- ($138) and eight-course ($178) degustation menus of Amador's signature dishes.
