Recipes for this semi-frozen dessert – like a granular sorbet, made with water, sugar and natural flavourings – vary from region to region across Italy, according to local ingredients. The classic flavours are almond, pistachio, coffee, lemon and chocolate, and it’s often served with a sweet brioche. In London, granita is growing in popularity.
