We love a good pop-up with a storyline and when the mastermind behind Yellowstone and its prequels 1883 and 1923 decides to team up with the folks at Wynn Las Vegas, count us in. We’ll be ready to saddle up and roll on that culinary journey.

Reservations are now available for a collaboration that will have Yellowstone cocreator Taylor Sheridan bringing Four Sixes Ranch Steakhouse to Wynn beginning September 16. The limited-time pop-up will take over the Tableau space and pair an outstanding Texas-size menu paired with an exquisite cocktail list.

Chef David Middleton is in charge of a curated menu that will emphasize only the best cuts of beef imaginable paired with other sophisticated items like a caviar tower, a raw bar, Wagyu brisket sliders and so much more. Expect bold, fiery flavors when the show comes to town.

Some of the highlights include: a tableside prime beef tartare prepared with grilled shallots, serrano peppers, mustard and house-made Texas corn tortillas chips; a full-bred Wagyu 40-ounce tomahawk steak; and a blackened dry-aged tuna chop.

Wynn mixologist Mariena Mercer Boarini will be whipping up some equally playful drinks. The craft cocktail list will have a campfire old-fashioned (smoked tableside, of course), a spicy Honky Tonk margarita and other signature cocktails.

The pop-up will be open nightly for dinner beginning September 16. Hours are Sunday to Thursday from 5:30 to 10pm and Friday and Saturday from 5:30 to 10:30pm. Reservations are now available.
