A Filipino pop-up dinner is coming to AMARI Italian Kitchen next week

A popular Las Vegas chef is hosting a farewell pop-up dinner at AMARI Italian Kitchen on Monday. Chef Roy Ellamar’s kitchen takeover is as much a way to honor the longtime Vegas chef for his impact on the community as it is to give diners one last chance to enjoy his food before he hits the road for Sonoma, California. 

The one-night-only Pamilya x Famiglia event takes place September 16. Seatings are available every half hour from 5:30 to 7:30 p.m. Tickets are $75 per person and can be purchased here

Ellamar and AMARI’s Alan Mardonovich have created a unique multi-course, family-style dinner that blends the flavors of Filipino and Italian cuisines. It will be the first of a series of exclusive collaborative dinners the restaurant plans to host in the coming months.

Over his career Ellamar has helped define the dining scene in the city and led the charge of chefs leaving the Strip to bring elevated fare into the city’s neighborhoods. Ellamar moved on from Harvest at the Bellagio and was running Fine Company in Downtown Summerlin until his departure in June. 

Here’s a look at Monday’s menu:

Welcome Slushie: A cocktail crafted with Italicus, coconut and light rum. 

Appetizers:

Crudo kinlaw: Made with tuna, calamansi lime and calabrese sausage. 
Okoy: Filipino fritters made with sweet potato, summer squash, colatura aioli and bottarga.
Burrata and focaccia: Manila beans, heirloom tomatoes and locally-sourced mushrooms.

Entrées:

Porchetta and lechon: A fusion of the two meats accompanied by an arugula salad, salsa verde, atchara and sawsawan.
Whole roasted branzino with fennel, charred lemon and ala pobre.
Mafaldine palabok with roasted shrimp broth, chicken chicharron and scallion oil. 

Desserts:

Ube panna cotta featuring Alphonso mango, macapuno and sweet basil. 
Banana lumpia with black sesame, jackfruit, ricotta and burnt honey.
