Truffles are undeniably one of the sought-after fruits of the earth. The fungus is a much precious ingredient that almost all discerning cooks and eaters pursue to get their hands on (and of course, to put in their mouth) because of its magnificent taste and smell.
But little you may know that truffles have a distinct species that is—no wonder—much more elusive and valuable, and it's white truffles. Trifola d'Alba Madonna is the Italian name of the white truffles, which basically means "Truffle of the White Madonna". They are mostly found and cultivated in southern Europe and specifically in the Piedmont region in northern Italy, with the most famous ones from the city of Alba, hence the name Alba Truffles.
White truffles essentially come to fruition from October to December. Unlike the black ones, the so-called "diamond of the kitchen" can enhance a wide range of cuisine like pasta, egg dishes, rice, and foie gras with its distinct aroma and extraordinary earthy flavor.
And another thing of white truffles that isn't ordinary is the price. According to New Yorker, in 2014, there was a white truffle weighing around 1.89 kg (4.16 lb) discovered in the Umbrian region in Italy, and it was then bidded at Sotheby's in New York with the final price of USD61,000 (or about B1,800,000) offered by a Taiwanese bidder. So if you do the math (which, I'm really sorry, I can't), you probably can assume how much it costs now.
