The chef/owner of one of H Street’s best restaurants, the Atlas Room, spent time at Vidalia downtown. His own place serves food majoring on local ingredients, with French and Italian influences in the cooking style—the likes of lamb meatballs with a white bean garlic purée, basil, yogurt and an olive coulis, or roast chicken with roast potato, spring onions, oyster mushrooms, green beans and a herbed jus.
