Time Out says

Le Pommier is a patisserie owned by Fédéric Madelaine, who has trained in patisseries and chocolatiers in Nantes, France. For his contributions to France’s culinary profession, he was awarded the honour of ‘Chevalier’, the French equivalent of a knighthood, in February 2009. His speciality is sweets in the shape of the zodiac animal of the year. There are also pastry classes held in the laboratory-like kitchen, right next to the busy chefs.
