Friends of baked goods have an additional reason to check out the Kengo Kuma-designed Forestgate Daikanyama complex with the April 2024 opening of this artisanal bakery in the French tradition. The cryptically named Et Nunc – Latin for ‘and now’ – is run by the same company managing Marunouchi’s venerable Palace Hotel, and commits itself to baking bread exclusively with Japanese ingredients, from Hokkaido- and Ibaraki-sourced flour to domestic butter, salt and sugar.
Besides signature offerings such as baguettes and pain de mie (sweet sandwich bread), the bakery turns out a number of seasonal specials throughout the year. Note that the types of bread on the shelves vary by time of day: croissants are available in the morning, the largest variety of sandwiches and pastries can be perused during the day, and baked goodies that pair especially well with wine make their appearance in the evening. Seating is available inside the shop.
