This season’s savoury selection includes an asparagus mousse with aioli sauce and tomato jelly, and tiger prawn and mussels served with green soybean soup and caviar. As for the sandwiches, expect classic smoked salmon and cucumber as well as a sea bream option with celery relish and cornbread. On the sweets tray you’ll find a pineapple tatin with passion fruit sauce, a raspberry dacquoise, an opera cake with espresso and buttercream, and a montblanc tartlet with cassis.
