100 year-old sushi restaurant Tsukiji Tama Sushi has opened its newest outlet, Sushi Honten Noboru, on the second floor of its original location. Once a banquet hall, this venue has been renovated into a sushi restaurant with 19 counter seats. Two types of courses are offered here: the Owner’s Omakase Kuchifuku Course (¥14,300) and the Owner’s Omakase Gokuumi Course (¥16,500).
The rice is made with Yokoi Brewery’s Yohei red vinegar, which is unique to this restaurant. It goes particularly well with its Edomae-style sushi such as marinated tuna, boiled anago (salt water eel), kohada and more. The restaurant also features dishes using homemade hishio, a fermented salty soybean paste that is best eaten with sushi rice and egg yolk wrapped in seaweed, or as a seasoning for abalone sashimi.
Drinks can be ordered by the glass, but we highly recommend the pairing that gets you a sparkling wine or beer to start, three kinds of sake and two additional drinks of your choice for ¥5,500.
