With the business side in the firm hands of Eiichi Yamada, a veteran of establishments like Feu and Édition Koji Shimomura, and the kitchen helmed by Junichi Kato, who previously worked in Paris and Copenhagen, Sublime appears to be set for success with its Nordic-French fusion cooking.
