Run by a French chef, innovative ramen eatery Mugi to Olive has earned rave reviews since opening in Ginza in early 2014, so it's no surprise that they set up another shop towards the end of the year. If the Ginza experience is anything to go by, this new spot inside the Manseibashi shopping complex will be serving hamaguri clam ramen, which actually comes in a rare triple soup combining clam, niboshi (dried sardines) and chicken broth, and makes for a fresh and refined but hard-hitting taste, the likes of which are hard to find elsewhere. Other creations here include a soy sauce-based, chicken-only soup that also holds its own among the competition, and excellent mazemen ('mix noodles') worth trying just for the near-perfect, medium-thick noodles.
