This new branch of major conveyor-belt sushi chain Kura Sushi is a thematic restaurant that whisks you back in time to sushi’s origins in the Edo period (1603-1868). At what is upmarket Ginza’s first-ever sushi go-round restaurant, design by acclaimed creative director Kashiwa Sato playfully recreates the kind of food stalls at which sushi was first sold way back when Tokyo was still known by its former name of Edo.

Kura Sushi Ginza is a place for entertainment as much as dining: a space named Kura Koedo conjures up the vibe of ukiyo-e prints by the famed Utagawa Hiroshige, with not only sushi but also tempura and dango (rice flour dumplings) being made before your eyes with performative flair. A backdrop of hi-tech simulated fireworks, meanwhile, is another reference to the pleasure-focused culture of Old Edo.

Both staple seasonal sushi options and a number of Ginza exclusives are delivered to you via what is Kura Sushi’s longest-ever rotating conveyor, measuring over 12 metres in length. Kid-friendly dishes are also offered, along with souvenir clothing items from the chain’s Unikura collaboration with fashion giant Uniqlo.
