One of the pioneers of Sichuan cuisine in Japan, chef Cho recreates the fiery flavours of his home region at this eponomyous Shinbashi restaurant, often mentioned as one of the very best Chinese eateries in Japan. Making the trip back to Sichuan several times every year, he works tirelessly to refine the flavours and ingredient combinations of dishes from drunken crab to dandan noodles and mapo dofu. We also have to mention the extensive selection of Shaoxing wine – this aromatic booze comes in countless vintages and styles, and accompanies Cho's cuisine with aplomb.
