This burger joint at the Mustard Hotel in Shibuya offers more than just your average bun and patty. The hamburgers here are crafted by Daiji Shiota, who spent some time working with Michelin-starred chef Fumio Yonezawa from Jean-Georges in Tokyo and New York. Using the techniques he’s learnt, Shiota has been able to create a burger featuring a patty with beef aged for 90 days. This aged beef helps give the meat an outstanding texture and a deeper flavour.
The signature item on Chillmatic's menu is the aged beef and homemade pastrami burger, which features thick slabs of pastrami on top of the patty. The menu also offers sides including grilled guacamole and edamame hummus. Additionally, the restaurant is open for breakfast, when you can order classic dishes like French toast and fried eggs with bacon.
