If you love ramen, but can’t handle that steaming noodle soup in summer, try a bowl of this shaved ice ramen from Tokyo ramen chain Bankara. This ramen-kakigori mash-up is a bizarre summer rendition of our favourite noodle dish, but thankfully, it’s not sweet.

Unlike other cold noodle dishes like hiyashi chuka, which are just noodles served in a chilled broth, this ramen takes things one step further with a mound of fluffy shaved ice that’s just frozen miso ramen broth. Although this kakigori hiyashi miso ramen may look like the typical shaved ice dessert we all know and love, don’t be mistaken by its appearance. Underneath all that ice, you’ll find proper ramen noodles, along with typical ramen toppings including menma bamboo shoots, bean sprouts and even chashu pork slices.
A bowl of these icy noodles goes for ¥880 and is available at Banakara locations around Tokyo. If you prefer to leave the ice for your desserts, Bankara also offers a hiyashi miso ramen served in cold broth, without the ice, which comes with negi (green onion) or aubergines.
