Vegan food is slowly picking up steam in Tokyo. We now see more and more non-vegan and chain restaurants introducing plant-based and meat-free items to their regular menus. Popular Japanese ramen chain Ippudo is hopping on the bandwagon by offering a plant-based ramen for a limited time starting February 1.
Ippudo has managed to replicate its signature akamaru ramen’s milky tonkotsu broth without any pork bones or animal products. Instead, the soup is made from soy milk, konbu seaweed and porcini mushrooms. Moreover, the egg-free noodles are made using whole wheat instead of white flour for a healthier twist.
The bowl of ramen is then topped with a mushroom medley – shimeji, maitake and wood ear mushrooms – tossed in garlic and olive oil, as well as scallions, the signature akamaru miso paste, and a slice of vegan ‘char siu’ made from kidney beans and wheat protein.
This meat-, egg- and dairy-free ramen costs ¥1,000 per bowl and is only available for a limited time starting February 1 at selected locations nationwide. In Tokyo, you’ll find it at these Ippudo outlets: Ebisu, Shinjuku, Asakusa and Ikebukuro.
