Ask a Tokyo-based bar writer to name his or her favourite watering holes and chances are Ginza's Fal will make the list. Opened in 1998 but looking like it's been in business at least since the '60s, it's one of the area's more curiously shaped drinking spaces: a long, narrow room dominated by a counter split into two parts. Exploring the plentiful selection of vintage whisky or going for a classic cocktail like a martini or gimlet won't result in disappointment, but our top recommendation has to be the masterful gin tonic, made with British Chase gin and embodying the 'essence' ('fal' in Gaelic) represented by the bar's name.
