Jazz and classic cocktails come together at this small basement bar hidden behind Ginza's Matsuya department store and named after pianist extraordinaire Bill Evans. Opened in 2005, it's made a name for itself among discerning musos, who stop by to enjoy the mellow melodies that gently flow out of the bar's pro-grade speakers. It's a supremely comfy place, best visited alone or together with a special someone; big groups are frowned upon and usually won't even fit into the compact space.
