It’s the time of year when you want to sprinkle icing sugar on every surface while humming "Let it Snow," and the lobby lounge of the Shangri-La Hotel Sydney has completely transformed into a hub of sugary holiday spirit. Throughout December, the hotel's award-winning dessert mastermind and executive pastry chef, Anna Polyviou, is leading the hotel in a series of sweet festive adventures.

For an elegant holiday indulgence, book in to a festive high tea by the twinkling Christmas tree. A seat at the high tea table will cost adults a reasonable $65 and kids aged 5-11 can join for $35 each, with seatings from 11am-6pm. You’ll get to enjoy three levels of inventive creations, including Christmas Bauble, Santa’s Cherry Pie, Tropi-cola Trifle and Presents Under The Tree, as well as classic buttermilk scones with jam and fresh cream.

Polyviou and her team have also constructed a giant merry-go-round that you and your little elves can marvel at free of charge. The life-sized carousel is made up of 750 kilos of gingerbread, 300 kilos of lollies and 100 kilos of royal icing, with vintage horses, reindeer and giant candy canes. It's a sweet feat of epic proportions.

While the kids marvel at the edible carnival ride, you can stock up on delicious gifts from the pop-up sweet shop. The store in Shangri-La’s lobby lounge is stocked with classic Christmas dessert centrepieces like gingerbread houses, fruit mince tarts, Christmas pudding, caramel Christmas logs and berry trifles. There are also adorable little gingerbread ninjas and mohawks; Polyviou is known as the Punk Princess of Pastry, after all!

The festive sweetscape at Shangri-La Sydney is open until January 5.
