There’s a new pretty, summer drink in town, one that’s made right here in Australia and you’re going to want to know about it. Introducing Rhubi, a thirst-quenching apéritif crafted in Victoria from fresh local rhubarb – and it’s absolutely delicious.
Strikingly scarlet in colour, Rhubi is created by fermented rhubarb juice, a juniper spirit, herbal French gentian, mandarin and grapefruit rind, resulting in a refreshing drink that’s both sweet and slightly bitter at the same time. Just pour the apéritif over ice, add in soda, top with a grapefruit segment and voilà! Joy in a glass.
The idea for Rhubi was first dreamt about in 2018 late one night behind the bar at one of Sydney’s top bars (and Time Out Bar Awards winner), Bulletin Place, by some of the country’s finest bartenders. Over the next few years the masterminds worked on perfecting the drink, and it’s now available for purchase across the country. Cheers to that.
