Gabriele Taddeucci, head chef at Darling Harbour’s Balla restaurant at The Star, suffers from coeliac disease. And he’s not alone. That’s why Balla and Time Out are giving gluten intolerant readers a chance to indulge in an Italian feast (but don't worry, you don't have to be gluten intolerant to enter the comp).
This three-course meal will start with house-baked buckwheat bread and rosemary focaccia on arrival, with shared antipasti to follow, including mozzarella-stuffed zucchini flowers, baccala mantecato and beef carpaccio served with Reggiano, artichokes and chickpea wafer.
The main event is the pasta, of course. There'll be gnocchi tossed with traditional duck ragù, and strozzapreti with spanner crab, cherry tomato and garlic, all served with baked cauliflower and mixed leaf salad with honey vinegar. Save some room for dessert, which will be cannoli, the classic Sicilian sweet pastry filled with ricotta, chocolate and pistachio.
