While we may still be in mourning for the OG Surry Hills Ume outlet, Bar Ume, life goes on at the two newer burger outlets at Barrangaroo and here at Haymarket's Darling Square. The inimitable Japanese-style burgers are still pretty as a picture in their uniformity, but this 'gram appeal is as much substance as it is style.

Chef and owner, Kirby Craig’s katsu chicken burger remains one of the best hot sandwiches we’ve eaten in the city, with chicken thighs wider than the sweet bun so that hot, juicy, crunchy bites stick out on all sides. The sweetness in the tonkatsu sauce is good, the subtle citrus in the yuzu mayo is even better, and they jam in enough finely shredded cabbage and the right amount of raw onion to keep things feeling fresh, not fatty.

Round your meal out with a serve of crisp, golden Koji fried chicken bites, hot and piquant housemade kimchi, and don't forget the lotus chips.
