Sydney barista Nick Stubbs, previously of Café Morso in Pyrmont, has opened up his own café in Vaucluse, “to bring a bit of the Inner West to the East. We’re trying to create a café culture here,” he tells Time Out, “focussing on nailing the basics.” The beans are supplied by Little Marionette coffee, so you can expect a stellar flat white alongside food from ex-Three Williams chef Lenny Walker.
