Sydney barista Nick Stubbs, previously of Café Morso in Pyrmont, has opened up his own café in Vaucluse, “to bring a bit of the Inner West to the East. We’re trying to create a café culture here,” he tells Time Out, “focussing on nailing the basics.” The beans are supplied by Little Marionette coffee, so you can expect a stellar flat white alongside food from ex-Three Williams chef Lenny Walker. Dishes like braised brisket in brioche with jack cheese, mustard greens and chipotle aioli already have our mouth watering, not to mention the roasted pepper and manchego omelette with jalapeño salsa…
