If the weather’s on your side, head to an outdoor table to take in the sun. Then, take your pick from starters such as sizzling garlic prawns or fish tacos which encase crispy flathead fillets in soft flour tortillas and brings them to life with a mild spiced slaw, fresh salsa and lime sour cream. Main dishes include crispy skin Tasmanian salmon fillet on a bed of slow-cooked Andalusian seafood and chorizo saffron paella, and pan-fried chicken breast with mascarpone, tomatoes and basil atop a serving of roasted baby beetroot risotto. More of an early bird? Grab a Pablo and Rusty’s coffee and pair it with a hearty brekky of classics such as eggs benedict or smashed avo on toast.
