Poke bowls may have been the dish of summer, but there's a new interactive dining experience designed for the cool weather: make-your-own-hotpots. Malabang is the latest addition to the World Square dining precinct, reworking Chinese malatang hot and spicy soup with the spirit of a salad bar.
You grab a bowl and load up on noodles, meat, prawns, mussels, raw veggies and aromatics. Your bowl is then weighed, you pay, and then your ingredients are cooked up in a broth made from 16 herbs and spices that takes six hours to prepare.
You can ratchet up the heat with Sichuan pepper, give it a savoury burst with sesame oil, or even use house made peanut butter to rich up the soup and dress your meat and vegetables. It's the ultimate customisable winter warmer.
