One of the heroic businesses that really carried us through the pandemic was Fabbrica Pasta Shop. Their weekend-only, pop-up bakery was a saviour for Sydney’s carb-craving iso crew, thanks to its fluffy focaccia slices and pillowy chocolate-filled bomboloni (an Italian filled doughnut). Now, fans of Fabbrica Bread Shop no longer need to reminisce about the days of lockdown, as the bakery will soon have its own permanent, bricks-and-mortar home in sunny Rozelle. 

The Love Tilly Group (Palazzo Salato, Love, Tilly Devine, Dear Sainte Éloise, Ragazzi, Fabbrica Pasta Shop, La Salut, Fabbrica Pasta Bar Balmain) is set to open its newest venue on Darling Street, inside the biggest Maloneys Grocer store to date, this August. You can soon follow the smells of freshly baked bread to the 24-seater space, which will be stocked with Fabbrica’s cult classic focaccia and sell-out sandwiches of King Street, along with nostalgic lockdown favourites including pork and fennel sausage rolls; chocolate-filled bomboloni; and banoffee tarts. 

Sweet tooths can also look forward to bronze-flaked pithiviers (a flakey French pie); cream-stuffed maritozzi (buns); velvety custard and chocolate tarts; and sticky, coiled morning buns. Fabbrica’s head baker Aniruddha Bhosekar will showcase his Indian heritage through exciting weekend specials, such as cross-laminated masala croissants featuring a spiced potato stuffing reminiscent of dosas; and vindaloo pies where goat meat takes centre stage. Baker Alyce Bennett, formerly of Humble Bakery, will be Bhosekar’s trusty sidekick in creating these mouthwatering delights.

For your daily bread, Fabbrica Bread Shop’s shelves will be loaded with loaves of its flagship sourdough, which is baked on-site daily after 24 hours of proofing. 

You can try to nab a sunny window seat for a light lunch with a beer, wine or Spritzes, or pick up a bag of still-warm pastries to enjoy in the park, with a takeaway coffee by Inner West roasters the Little Marionette.

Fabbrica Bread Shop ticks all the boxes for a great local bakery, and we’ll see you in line when it opens this August.
