This Edition Coffee Roasters outpost is doing one thing, and doing it well: coffee. While you won't find any of the Japanise-Nordic fusion-snacks they are known for in their Darlinghurst café you will find a good brew. Their house blend from India compliments the creaminess in the white coffees and they use and Ethiopian blend for their filter coffees and pour overs.
The owner of Edition, Corie Sutherland sources the beans from Latorre & Dutch and roasts them himself. He buys around two tonnes at a time, and depending on what’s good when seasons change, he often mixes it up with a different bean next time around. But he doesn’t blend, preferring the purity of a single origin. At the moment they’re from Colombia, and combined with his roasting process, they make for a flat white that is smooth and light with barely a hint of bite or smoke.
