You’ll want to come hungry and preferably with a crew to this late-night Mexican diner in Penrith. Checho’s has become a red-hot favourite for locals since it opened in 2020, filling a much-needed gap in Western Sydney for contemporary Mexican fare.
Leave your sombreros at home, because Checho’s breaks free from the cliches – instead, you’ll find a bright pink facade with pastel tones and tiles inside, plus a neon cactus feature illuminating the bar.
Thanks to Tex-Mex, you’d be forgiven for thinking Mexican cuisine is just tacos, burritos and nachos. When in reality it’s a whole world of textures, ingredients and vibrant flavours. Checho’s knows this, serving up colourful plates designed to be passed, portioned and shared. Fill your table with spiced corn ribs; popcorn chicharrones (crackling pork belly); Mezcal halloumi; and sticky slow-cooked lamb ribs, before moving on to Checho’s signature CFC (fried chicken) or adobo (a Mexican spiced sauce) braised lamb shanks, with patatas bravas and a watermelon salad with Tajin (a chilli and lime seasoning) on the side.
As for tacos, there are five to play with including spiced fried chicken, pulled pork carnitas, beef brisket barbacoa, fish, and fried cauliflower. Pair your fiesta with one of Checho’s signature cocktails including a weekly changing frozen Margarita special and a Tequila Sour, a glass of vino or a sessionable beer.
The party doesn’t have to end with dinner, and thanks to Checho’s midnight bar licence, you can keep the drinks flowing late into the night.
