This fusion-focused Hall Street dining hub is the creative concoction of chefs Tomi Björck and Samuel Cole. The menu is an unusual amalgamation of Mediterranean and Japanese flavours. There's plenty of fresh, raw and cured seafood and meats as well as some fancied-up veggo dishes, all of which are designed for sharing among small or large groups.

If you’re only in for a pitstop at the bar, there’s an impressive selection of smaller plates to peck at. Try the oxtail and braised beef dumplings with a black vinegar dressing and pickled chilli. Alternatively, bring friends and family in for a proper feast, with the tasting menus starting at $67 per person. For the full event, Blanca’s dedicated chefs pair these degustations with a list of wines and sake.

The restaurant’s interiors inspire a sense of calm, with a monochrome colour palette and minimal furnishings. But this bare design doesn’t take away from its welcoming atmosphere.
