From Alan Thompson, the previous owner of popular Surry hills café, Bangbang, comes new Waterloo café Barista and Cook. He’s brought in Excelsior Jones’ former chef Adrian Borg to head up the kitchen, and with pedigree like that, we’re pretty excited.
The menu is seasonally focussed with everything made in house, except for loaves from Brasserie Bread. How does chargrilled pork belly with chilli fried eggs, crushed edamame and puffed black rice for brekky sound? Or maybe you’d rather some smoked trout kedgeree with spiced rice, boiled eggs and citrus yogurt? There are mac’n’cheese toasties for lunch, alongside the usual suspects of burgers (grass-fed, no less) and fried chicken.
The coffee is by Gypsy Espresso and comes in all shapes and sizes (prepared in a V60 or Chemex coffeemaker for example) and Giant Designs have designed the massive, Scando-inspired space with plush banquette seating and exposed brick walls.
Waterloo, it seems, just got a little bit fancy.
