Matcha-spiked everything, soft serve and rainbow/unicorn malarkey have all had their time in the limelight, but now it's time for the humble trifle to shine. The pudding classic is getting some sweet treatment from some of Sydney's favourite dessert kings, just in time for Christmas. If you want to bring your boozy dessert A-game this festive season, here's where to get the hook-up.
Saga's Andy Bowdy is whipping up two trifles named after his Nan and Pop (Cute!). Order up the Cath, with nan's sponge, vanilla Chantilly cream, passionfruit curd, mango bavarois, salted coconut cream, coconut chew, slices of tropical fruit and brown sugar pecans; or the Ted with chocolate fudge cake, white chocolate mascarpone, morello cherry compote; Nutella cremeux, candied hazelnuts and a chocolate hazelnut crumb. You'll need to order these ahead of Christmas, for pick up from Saga on Christmas Eve. Each comes served in a glass trifle bowl, serves 20 people and costs $195. But you do get to keep the bowl when you're done. And if you want to b a bit more continental this Christmas, they're also doing their tiramisu in the same size.
Gelato Messina are also peddling out the Christmas Coma – a layered melange of peach jellies, raspberry and marsala jelly, vanilla custard gelato, whipped vanilla cream, raspberry meringue, sherry soaked jam rolls, and blood peach sorbet. It all comes topped with white chocolate leaves and cherry truffles. You also get a one litre bottle of Messina brandy custard and a bag of chocolate coated nuts and rice crispies, so you will be well and truly adored if you show up with this bad boy to any Christmas gathering. It serves around 18-20 people, it'll set you back $120 and you can pick it up from Gelato Messinas at Rosebery, Bondi, Darlinghurst, Miranda, Parramatta, the Tramsheds or Penrith.
