Last year Bennelong got into the spirit of nostalgic Australiana snacking when they started offering their famous lamington at the bar. This year they're upping the ante, creating what has to be the world's most baller neenish tart. Fans of the black-and-white country bakery staple can test their love with Peter Gilmore's upmarket rendition, which involves a chocolate shortcrust pastry shell filled with house-made raspberry jam, custard cream and topped with a white and dark chocolate ganache. It will be served along with a house-churned berry ripple ice cream, all for the princely sum of $28, which is exactly what you expect from a restaurant inside the Opera House sails.

The launch date for the tart in January 26, when it will join the regular dessert line-up, including the meringue Opera House and the aforementioned cherry jam lamington. Our speculation for 2020: gold-plated vanilla slice.
