You might have thought that gelato was a dessert-only endeavour, but those creative cats over at Messina are determined to push the boundaries, creating five savoury dishes using gelato, was well as five sweets, and pairing the lot with ten cocktails from the gang at PS40.

Just how exactly are they going to be adding gelato to sandwiches? roasted bone marrow and scallops you may well ask? Well, for starters the marinated grilled eggplant is topped with a miso gelato and frozen foie gras shavings. They're making a super summertime sambo with roasted almond gelato, roasted chicken skin powder, potato and brown butter foam, potato crisps and Osetra caviar between the bread slices, and they roasted bone marrow gets a citrus refresher from a yuzu kosho sorbet. And you know what, we can totally see how raw scallops would go with a bergamot, olive oil and sage sorbet on top.

Of course there are also desserts to choose from, including strawberry and hibiscus vinegar sorbet and matcha gelato, and on the drinks front there's an alcoholic and non-alcoholic match for each dish, like a frozen pandan Daiquiri with white rum, mint, pandan, lime, and coconut pandan sorbet; or a Messina Americano made with Campari, sweet vermouth, blood orange, creaming blood orange soda and vanilla gelato. It's going to be a wild time.

To get a taste of all this Alice in Wonderland/Willy Wonka alchemy, head to PS40 in the city from Thursday October 26 until Saturday October 28, where the food will be available from 6-10pm, and the cocktails on offer from 4pm until midnight.

PS40, 40 King St, Sydney 2000.
