Sitting atop the Cauliflower Hotel is a rooftop rum bar that’s a world away from the homey local vibe of the pub downstairs. How far exactly are we talking? Well, the theme here is Caribbean, with tropical décor and palms aplenty. They take their rum seriously here, stocking over 100 varieties, including several from St Lucian distilleries you won’t find in other bars such as Admiral Rodney and the Chairman’s Reserve Range. If you’re unfamiliar with the dram beyond the occasional Mojito and memories of rum-and-colas on the dancefloor as a teen, here’s the place to get educated. They’ve got bottles categorised by English, Spanish, French and Brazilian styles, spiced rums, rum flights, and rum cocktails by the dozen. Each cocktail is named after a famous pirate – the Red Beard comes with Cubaney 15-year spiced rum, Campari and Antica Formula. If you’re looking for something more summery, opt for the William Kidd, which blends Chairman’s White, passionfruit, vanilla, lime and Prosecco. On the menu are both pub classics and Caribbean and South American flavours, with bites like jerk chicken wings, spiced barramundi tacos and cauliflower curry.
