The lavish interiors of Sydney’s posh GPO building make for a suitable impression on the uninitiated. Designer furniture sits well in the imposing space, where the historical building is neatly meshed with modern updates. This is a romantic, clandestine place for the worship of fine wines and cheeses. It’s great to see a long, international wine list that’s heavy on the local gear. New South Welshies can be proud with an array of local tipples, but the big guns from all around the country get a decent look-in too. All things measured, it really wouldn’t be polite to not have a crack at one of GPO's curated cheese and wine flights ($28-$35): whites, reds or even single malts are aptly matched to the soft, the hard, the blue and the downright stinky. It’s a veritable love-in for dairy fiends and wine lovers alike.
