June might mark the start of the chilly season, but this city is showing no signs of hunkering down just yet. The Tap Rooms in the Rocks has partnered up with Brit gin brand Beefeater Gin to bring a little taste of London to the venue's sun lounge and outdoor garden bar. Sip on different takes on the ever-popular spirit in a room decked with floral installations and even a red phone booth for your very own ‘London Calling’ moment.
Choose from a limited-time pop-up menu which plays with different kinds of Beefeater gins: the Pink Gin gets twizzled with mixed berries, lemon and Prosecco in the Pink Fizz, while a Blood Orange Negroni is the result of Campari, Lillet Blanc and Beefeater’s Blood Orange Gin. A classic G’n’T is on the cards too, either with tonic and grapefruit or juniper and lemon, made with a Gin 24 or a London Dry. Cocktails range from $13-$16, but you can make it easy for yourself and just grab any four for $55. There’s also a carafe of the Kissed from a Rose cocktail on offer: it’s a crowd-pleasing muddle of Pink Gin, rose, berries, pink grapefruit and mint.
In the sun lounge, you can book in for a bottomless banquet experience ($79 per person). You’ll be plied with a Beefeater cocktail on arrival, followed by two hours of bottomless gin-spiked sangria. As for what’s on the food menu? Rip off a hunk of flatbread topped with harissa-spiced eggplant, yoghurt, pine nuts, parsley; nibble on marinated olives; and sink into a plate of haloumi with a pea and mint hummus and cracked pistachio. A whole smoked paprika-rubbed chicken is the main event, served with chips and a fresh apple cabbage slaw with poppy seed dressing.
