The team from Beach Haus have changed things up, bringing on Rajendra Tamang (formerly of Flying Fish and Sokyo) to bring Japanese munchies to the masses. Geisha Haus serves creative sushi and seafood dishes like a scallop tempura topped with crisp shredded leek and paired with spicy mayonnaise and ceviche dressing, seared salmon rolls with crispy eschalot and creamy sauce, or a 'maguro hana' – tuna flowers served with spicy mayonnaise and topped with baby herbs on a bed of tempura rice. This being a sushi bar and lounge inside a nightclub, they also do a range of creative cocktails made at the table with special flourishes: liquid nitrogen, dry ice and smoke-filled decanters are the way forward here.
