Darlinghurst’s famous haunt cooks up a Smoky Negroni

Next week is Negroni Week (June 6-12), seven days dedicated to the classic combination of gin, vermouth and Campari, and Darlo Bar is upping the ante with its spin on the cocktail.

Take all the delicious ingredients of a Negroni, pour into a decanter and infuse with a tasty pecan smoke. The result balances sweet, savoury and bitter flavours with a hearty smoke undertone. 

The loungeroom of Darlinghurst, Darlo Bar is fun, creative and a bit kooky, where young artists, Darlo residents and everyone in between come to chill. Upstairs in the open-air Garden Bar they love their cocktails, and don’t always lean towards the traditional.

Here's the recipe by Darlo Bar:

Smoky Negroni

- 30ml Beefeater gin
- 30ml Campari
- 30ml sweet vermouth
- Pecan smoke infusion

Build all ingredients into a mixing glass and stir with ice. Pour into decanter, stir to infuse with smoke for ten seconds and swirl. Strain into a double rocks glass over an ice sphere and garnish with an orange twist.
