Maybe you're really picky, or you fancy yourself an expert at mixing flavours – anything goes at Peperoni's new Pizza Collective. At this Bugis+ stand, pick your permutation from 28 toppings and five 'drizzles' – a finishing squirt of sauce – for a DIY pizza ($12). Toppings range from the conventional (like pepperoni and mozzarella), to the upmarket (pork chorizo and arugula), to the downright weird – think wasabi aioli or Coke reduction.
But if a pie topped with blue cheese, pineapples, kimchi and Coke doesn't float your oven paddle, there are the six pre-designed signatures ($12) to pick, including options like kimchi- and luncheon-meat topped Kim-Ky, chorizo and white-sauced Chor-Lita, and chocolate and banana Monkey Business dessert pie. The Pizza Collective cooks its 'zas in a stone hearth oven.
