The Mast’ Of Mozzarella & Co. is the only place in Singapore where you can get freshly made buffalo milk cheeses made right on site. The brand hails from Rome, where it developed its proprietary Compact Machine that can produce up to six kilograms of mozzarella in minutes. Its Singapore outpost at Frasers Tower is its first in Asia and it offers an all-day dining menu that highlights ingredients from Italy – including the prized buffalo milk from Valle dei Templi in Paestum.
Order the Tris Di Bufala ($28) a tasting platter of its signature cheeses, which includes burrata, mozzarella and a limited edition flavoured burrata that you can smear on schiacciata, a Tuscan-style flatbread. Other favourites include the Bigoli Pasta ($20) doused in fresh tomato sauce and the Campano Burger ($22), a hearty Black Angus burger layered with buffalo mozzarella, fresh tomato and onion.
