The marriage between Italian and Japanese cuisines isn’t entirely new, yet Nuvo at least shows that this fusion of flavours can yield more than just mentaiko topped on pasta. Its starters feature the Nuvo three-cheese gyoza ($21): it's a dumpling filled with smoked scamorza, pecorino and mozzarella, and served with a side of mikan-glazed carrots. As for the pasta, swapping out bacon in the carbonara with smoked pork belly and foie gras makes for a decadent dish ($28).
The grilled Kurobuto pork cutlet ($34) is topped with rayu sauce and served with Iberico chorizo and cannellini white bean casserole. Desserts ($10-$16) are equally well thought out, where the seemingly simple open-faced apple torte ($12) is caramelised and served with apricot marmalade and Sudachi sorbet.
