Machida Shoten

The Kanagawa prefecture-hailing Machida Shoten is famed for its iekei ramen. Try the shoyu tonkotsu option ($14), which combines thick noodles with a broth that’s built from pork and chicken bone to achieve its creamy texture. If that sounds a little too rich, reach for the miso tonkotsu ramen ($14) instead, made with a tonkotsu soup base and a blend of red and white miso. Unless you’re inclined, give the curry-dressed garden salad ($9) a miss and make space for the Iberico spare ribs ($14) that’re seasoned just so in sweet soya sauce. They’re sticky and fall-off-the-bone good, and addictive enough that you’ll want the whole plate to yourself.
