Japan Food Town, located within Wisma Atria, might have since shuttered, but its soufflé pancake store, Riz Labo Kitchen, lives on in Picnic Food Park in all its jiggly glory. Only now, the store is known as Kumo Keiki, which aptly translates to ‘cloud cake’.
The pancake specialist makes its gluten-free treats using a batter that comprises organic Japanese rice flour, Japanese eggs, and Kagoshima brown sugar to create its signature, inch-thick wobbly stacks. Expect a 15-minute wait as each pancake is prepped fresh upon order.
You can savour it as is with simple accompaniments of whipped cream and maple syrup ($12/$15), but the pillow-soft circles are best enjoyed with fresh strawberries, strawberry sauce, and a side of homemade vanilla ice cream ($19/$22). Other popular choices include the mont blanc pancake ($19/$22), with sweet potato paste and chestnut purée; hojicha tiramisu ($17/$20) topped with chocolate sauce and sliced almonds; and the tropical mango version ($19/$22) that comes with mango sauce, mixed berries, and a sprinkling of coconut powder.
