The signature soup at Ichikokudo Ramen is prepared with fresh chicken, vegetables and a blend of ingredients from Hokkaido, including the all-important bonito, kelp and mackerel. The resulting soup is one that is rich and dense with umami flavours. The taste of Hokkaido does not end at just the broth; their ramen noodles are exclusively made with a special blend of Hokkaido wheat which adds a distinct springiness to each bite.

Ichikokudo Ramen has four main types of soup base: shoyu, hokkai, miso and hokkai-jigoku. The variety offers diners with quite a spread and different flavour profiles, whether youprefer umami miso, deep shoyu flavours, or something spicy for hokkai-jigoku. One of the most popular items is the Ichi-beef ramen: in a bowl of shoyu-based broth, there are sukiyaki-style beef slices, marinated egg, wood ear mushrooms, seasoned bamboo shoots, and chopped green onion.
