You might know of the Hototogisu name from its CHIJMES outlet, which uses clams and truffles to flavour its popular Shio Hamaguri Ramen. But this Hototogisu outlet at Great World uses another shellfish to flavour its stock: oysters. In particular, the Oyster Shio Ramen ($15.90) comes with a clear broth and intense oyster jam that packs a briny, sweet punch. Those who aren’t fans of oysters can still enjoy its usual tonkotsu-based ramen dishes ($13.90).
